  • 1/2 teaspoon granulated sugar

Wet Ingredients:

  • 1 large egg, room temperature
  • 1/2 cup (122.5 g) whole milk
  • 1 tablespoon unsalted butter, melted

Additional Ingredients:

  • 1 can (15.25 oz) sweet corn, drained (about 1 1/2 cups kernels)
  • 2 medium jalapeños, seeded and finely diced
  • Vegetable oil for frying
  • Parsley for garnish

Instructions

  1. Dry Ingredients: In a medium bowl, combine flour, cheese, baking powder, garlic powder, salt, and sugar.
  2. Wet Ingredients: In a separate bowl, whisk together the egg, milk, and melted butter until fully combined.
  3. Pour the wet mixture into the dry mixture and stir just until combined; do not overmix.
  4. Gently fold in the corn and jalapeños.
  5. Heat vegetable oil in a heavy pot over medium heat until it reaches 350 °F (175 °C).
  6. Working in batches, drop 4–5 spoonfuls of batter into the hot oil. Fry until golden brown, about 2–3 minutes per batch, maintaining oil temperature.
  7. Remove nuggets with a slotted spoon and drain on paper towels.
  8. Garnish with parsley and serve immediately.

Notes

  • Batter (without corn and jalapeños) can be mixed and refrigerated up to 24 h in advance; stir before using.
  • Oven-bake alternative: Preheat oven to 400 °F, place nuggets on parchment-lined baking sheet, bake 12–15 min, flipping halfway.
