  • 1 pound baby gold potatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced

Seasoning and Garnish:

  • 3 tablespoons olive oil
  • 1 packet (1 ounce) Italian dressing seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare Ingredients: Place chicken thighs in the slow cooker. Add potatoes, bell peppers, and onion on top.
  2. Mix Seasoning: In a bowl, combine olive oil, Italian seasoning mix, garlic powder, oregano, basil, salt, pepper, and red pepper flakes. Pour over the chicken and vegetables. Toss to coat.
  3. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and potatoes are cooked.
  4. Finish: Sprinkle Parmesan over the dish before serving. Garnish with parsley if desired.

Notes

  • Substitute chicken breast for thighs if preferred.
  • Add zucchini or cherry tomatoes for extra veggies.
