4 boneless, skinless chicken thighs
1pound baby gold potatoes, halved
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
Seasoning and Garnish:
3 tablespoons olive oil
1 packet (1 ounce) Italian dressing seasoning mix
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
1/4cup grated Parmesan cheese
Fresh parsley for garnish (optional)
Instructions
Prepare Ingredients: Place chicken thighs in the slow cooker. Add potatoes, bell peppers, and onion on top.
Mix Seasoning: In a bowl, combine olive oil, Italian seasoning mix, garlic powder, oregano, basil, salt, pepper, and red pepper flakes. Pour over the chicken and vegetables. Toss to coat.
Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and potatoes are cooked.
Finish: Sprinkle Parmesan over the dish before serving. Garnish with parsley if desired.
Notes
Substitute chicken breast for thighs if preferred.
Add zucchini or cherry tomatoes for extra veggies.
For a crispy texture, broil the dish briefly after slow cooking.
