For the Beef Ragu:

  • 2 lbs beef chuck, cut into cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 tbsp tomato paste
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Beef: In a large pot, heat olive oil over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef and set aside.
  2. Sauté Aromatics: In the same pot, add more oil if needed. Sauté the onion, garlic, carrot, and celery until softened.
  3. Deglaze the Pot: Pour in the red wine to deglaze the pot, scraping up any browned bits from the bottom.
  4. Add Remaining Ingredients: Return the beef to the pot. Add crushed tomatoes, beef broth, tomato paste, oregano, thyme, salt, and pepper. Stir to combine.
  5. Simmer: Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 2-3 hours, or until the beef is fork-tender.
  6. Finish and Serve: Taste and adjust seasoning if needed. Serve the beef ragu over cooked pasta, garnished with fresh parsley.
