Prawn Mixture

  • 2 teaspoons light soy sauce
  • 1.5 teaspoons freshly grated ginger
  • 2 small cloves garlic, roughly chopped
  • 1 large egg

Coating and Frying

  • 0.5 cup sesame seeds
  • 4 cups vegetable oil (for deep frying)

  • Sweet chili sauce, for dipping


Instructions

  1. Preparation of Bread: Cut the crusts off the bread and slice each piece in half. Arrange the pieces flat on a wire rack and cover with a clean tea towel. Let them dry out overnight for optimal crunchiness.
  2. Prepare Prawns: Shell and devein the raw prawns, then roughly chop them to preserve some texture.
  3. Make Prawn Mixture: In a food processor, combine the chopped prawns, spring onions, light soy sauce, freshly grated ginger, chopped garlic, and egg. Pulse until the mixture is well combined but still has some prawn chunks for texture.
  4. Assemble Toasts: Spoon a generous, about 1cm thick, layer of the prawn mixture onto one side of each bread half. Level the mixture for even coating.
  5. Coat with Sesame Seeds: Gently roll the side with the prawn mixture into the sesame seeds until each piece is well coated. Place them sesame seed side up on a wire rack.
  6. Heat Oil: In a large saucepan, heat about one inch of vegetable oil to 180°C (350°F). The oil should shimmer when ready.
  7. Fry Toasts: Carefully place 5-6 pieces of the sesame prawn toast into the hot oil, sesame side down. Fry for 2-3 minutes or until they are golden brown and crispy.
