Ingredients

Chuck Roast:

3-4 lb chuck roast

Seasoning:

2 tablespoons olive oil, 2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 tablespoon Worcestershire sauce

Onion Mixture:

2 large yellow onions (thinly sliced), 4 cloves garlic (minced), 1 tablespoon tomato paste

Liquid and Thickener:

1/2 cup dry red wine (optional), 1 1/2 cups beef broth, 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Herbs:

4 sprigs fresh thyme or 1 teaspoon dried thyme

Instructions

  1. Sear the Roast: Heat olive oil in Instant Pot and sear seasoned roast on each side.
  2. Caramelize Onions: Cook onions until caramelized, then add garlic and tomato paste.
  3. Deglaze and Pressure Cook: Deglaze with wine, add broth, Worcestershire sauce, and thyme. Pressure cook for 60 minutes.
  4. Thicken Sauce: Shred the roast, thicken sauce with cornstarch if desired.
