Ingredients
Scale
Fried Rice
- 2 cups cooked jasmine rice
- 1 tablespoon vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon sesame oil
- Green onions, chopped, to taste
Grilled Skewers
- Chicken or beef skewers, grilled (4 skewers for 4 servings)
Instructions
- Heat the oil: Warm the vegetable oil in a large pan over medium heat to prepare for cooking the eggs and vegetables.
- Scramble eggs: Pour the beaten eggs into the pan and scramble them until fully cooked, then remove from the pan and set aside.
- Cook vegetables: Add the mixed vegetables to the same pan and stir-fry for 2 to 3 minutes until they are tender but still crisp.
- Add rice and sauces: Add the cooked jasmine rice to the pan, then pour in the soy sauce, sweet soy sauce (kecap manis), and sesame oil. Stir thoroughly to evenly combine all ingredients.
- Incorporate eggs and green onions: Fold the scrambled eggs and chopped green onions into the rice mixture. Cook for an additional 2 minutes to blend flavors and heat through.
- Serve with skewers: Plate the fried rice and top it with the grilled chicken or beef skewers. Serve immediately for a delicious meal.
Notes
- Use day-old rice for best texture; freshly cooked rice can be too moist and sticky for frying.
- Adjust the amount of sweet soy sauce (kecap manis) based on your preferred sweetness level.
- Substitute mixed vegetables with any preferred fresh or frozen veggies to suit taste or seasonal availability.
- Grill the skewers ahead of time or use pre-cooked ones for quicker preparation.
- For a vegetarian version, omit the skewers and add tofu or tempeh as a protein alternative.
