2 scallions, thinly sliced
1/4 teaspoon freshly grated nutmeg (optional)

4 slices country-style bread, toasted
Instructions
Preheat the oven: Preheat the oven to 400°F (200°C).
Roast Cauliflower: Place cauliflower florets on a sheet pan, drizzle with olive oil, red pepper flakes, salt, and pepper, and roast for 20–25 minutes until tender and browned.
Mix Ingredients: Chop the roasted cauliflower, mix with crème fraîche, Parmesan, Gruyère, scallions, and nutmeg.
Assemble: Spoon the cauliflower mixture onto toasted bread slices.
Bake: Bake for 10 minutes until the topping is hot and cheese is melted.
Serve: Serve warm.
