  • 2 large eggs
  • 3/4 cup vegetable oil

  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 cup crushed pineapple (drained)
  • 1/2 cup chopped pecans
  • 1/2 cup shredded sweetened coconut

For the frosting:

  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. Prepare wet ingredients: In another bowl, beat together granulated sugar, brown sugar, eggs, oil, and vanilla until smooth. Stir in bananas, pineapple, pecans, and coconut.
  4. Combine and bake: Add the dry ingredients to the wet mixture and mix until just combined. Pour the batter into the pan and bake for 55–65 minutes. Cool before frosting.
  5. Make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar, cinnamon, vanilla, and salt. Beat until light and fluffy.
  6. Frost the bread: Once cooled, spread the frosting over the top of the bread.
