1 teaspoon baking soda

1/2cup crushed pineapple with juice
2 medium ripe bananas mashed
1 teaspoon vanilla extract

Cinnamon Cream Cheese Frosting:
8oz cream cheese, softened
1/4cup unsalted butter, softened
2cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
Prepare the batter: In a large bowl, whisk together flour, sugars, baking soda, baking powder, salt, cinnamon, and nutmeg. In another bowl, whisk eggs, oil, pineapple, bananas, and vanilla. Combine wet and dry ingredients, fold in pecans.
Bake: Pour batter into the pan, bake for 55–65 minutes until a toothpick comes out clean. Cool before frosting.
Make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and cinnamon, mix until creamy.
Frost the bread: Spread frosting over cooled bread, garnish with pecans if desired.
Notes
For a lighter version, skip the frosting and serve as a quick bread.
