Huli Huli Chicken Recipe

Huli Huli Chicken is a Hawaiian grilled chicken dish marinated in a sweet and savory sauce made with pineapple juice, soy sauce, and ginger, giving it a deliciously caramelized flavor.

  • 1 whole chicken (about 4 lbs), cut into halves or quarters
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice
  • 1/4 cup chicken broth
  • 2 tablespoons rice vinegar
  • 1 tablespoon ginger, freshly grated
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, chicken broth, rice vinegar, ginger, garlic, Worcestershire sauce, sesame oil, and black pepper.
  2. Place the chicken in a large resealable plastic bag or dish and pour the marinade over it. Seal and refrigerate for at least 4 hours or overnight.
  3. Preheat a grill to medium heat. Lightly oil the grates to prevent sticking.
  4. Remove chicken from the marinade and place it on the grill. Reserve the marinade for basting.
  5. Grill the chicken for about 35-40 minutes, turning occasionally and basting frequently with the reserved marinade, until fully cooked and caramelized.
  6. Remove from grill and let rest for a few minutes before serving.

Notes

  • Use bone-in, skin-on chicken for best flavor.
  • Marinate overnight for deeper flavor penetration.
  • Can also be baked in the oven if grill is unavailable.
