Ingredients

Units Scale

For the cake:

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 1/2 cup rainbow sprinkles

For the frosting:

  • 1 1/2 cups unsalted butter, softened
  • 6 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 34 tablespoons heavy cream
  • 1/2 cup rainbow sprinkles, for decorating

Instructions

  1. Preheat the oven and prepare the cake pans: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. Make the cake batter: In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually mix in the dry ingredients, alternating with the milk. Fold in the rainbow sprinkles.
  3. Bake the cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  4. Make the frosting: In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, vanilla extract, and heavy cream, mixing until smooth and fluffy.
  5. Assemble the cake: Place one cake layer on a serving plate and spread a layer of frosting on top. Repeat with the remaining cake layers. Frost the top and sides of the cake with the remaining frosting. Decorate with rainbow sprinkles.
  6. Serve and enjoy: Slice the cake and serve. Store any leftovers in an airtight container at room temperature.

Notes

  • You can customize the sprinkle colors to match the theme of your event.
  • Make sure your cakes are completely cooled before frosting to prevent melting.
  • For a more vibrant look, press additional sprinkles onto the sides of the frosted cake.
