1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2cup unsalted butter, cold and cubed
3/4cup buttermilk
4 boneless, skinless chicken thighs
1cup buttermilk (for marinating chicken)
1cup all-purpose flour (for dredging)
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Salt and pepper to taste
Vegetable oil, for frying
1/2cup honey
2 tablespoons hot sauce
1 tablespoon butter
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in butter until mixture resembles coarse crumbs.
Stir in buttermilk until dough comes together. Turn onto floured surface, pat into 1-inch thick, and cut into rounds.
Place biscuits on baking sheet and bake for 12–15 minutes until golden brown.
Meanwhile, marinate chicken thighs in buttermilk for at least 30 minutes.
Mix flour, paprika, garlic powder, cayenne, salt, and pepper in a shallow bowl. Dredge chicken in flour mixture.
Heat oil in a skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 4–5 minutes per side. Drain on paper towels.
In a small saucepan, combine honey, hot sauce, and butter. Heat until melted and combined.
Split biscuits and assemble with fried chicken. Drizzle with hot honey sauce and serve warm.
Notes
For extra heat, increase the amount of cayenne pepper in the dredge or hot sauce in the honey mixture.
You can use chicken breast instead of thighs if preferred.
