Ingredients

Baby Potatoes:

2 lbs baby potatoes (halved)

Mustard Sauce:

2 tbsp olive oil, 2 tbsp Dijon mustard, 1 tbsp whole grain mustard, 1 1/2 tbsp honey, 2 garlic cloves (minced), 1 tsp fresh thyme or 1/2 tsp dried thyme, salt and black pepper to taste

Garnish:

chopped parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Mustard Sauce: In a large bowl, whisk together olive oil, Dijon mustard, whole grain mustard, honey, garlic, thyme, salt, and pepper.
  3. Coat Potatoes: Add the halved baby potatoes to the bowl and toss until well coated.
  4. Roast Potatoes: Spread the potatoes on a parchment-lined baking sheet in a single layer. Roast for 35–40 minutes, flipping halfway through, until golden and tender.
  5. Garnish and Serve: Remove from the oven, garnish with parsley if desired, and serve hot as a side dish.
