4 boneless, skinless chicken breasts
1/4cup honey
1/4cup fresh lime juice
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon ground cumin
Salt and pepper to taste
2 ripe mangoes, diced
1/2 red bell pepper, diced
1/4 red onion, finely chopped
1 jalapeño, seeded and minced
1/4cup fresh cilantro, chopped
1 tablespoon fresh lime juice (for salsa)
Salt to taste (for salsa)
Instructions
In a bowl, whisk together honey, lime juice, olive oil, garlic, cumin, salt, and pepper.
Place chicken in a resealable bag or dish and pour marinade over it. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours.
While the chicken marinates, prepare the mango salsa by combining mangoes, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Mix and refrigerate until ready to use.
Preheat grill or grill pan over medium-high heat.
Remove chicken from marinade and grill for 5-6 minutes on each side or until cooked through and nicely charred.
Remove chicken from the grill and let rest for a few minutes.
Serve chicken topped with mango salsa.
Notes
Use ripe but firm mangoes for best texture in salsa.
Adjust jalapeño amount based on desired spice level.
Chicken can also be cooked in a skillet or baked if grill is unavailable.
