Honey Lime Chicken with Mango Salsa

A vibrant and flavorful dish featuring grilled honey lime marinated chicken topped with a refreshing mango salsa. Perfect for summer meals or light dinners.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 ripe mangoes, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice (for salsa)
  • Salt to taste (for salsa)

Instructions

  1. In a bowl, whisk together honey, lime juice, olive oil, garlic, cumin, salt, and pepper.
  2. Place chicken in a resealable bag or dish and pour marinade over it. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours.
  3. While the chicken marinates, prepare the mango salsa by combining mangoes, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Mix and refrigerate until ready to use.
  4. Preheat grill or grill pan over medium-high heat.
  5. Remove chicken from marinade and grill for 5-6 minutes on each side or until cooked through and nicely charred.
  6. Remove chicken from the grill and let rest for a few minutes.
  7. Serve chicken topped with mango salsa.

Notes

  • Use ripe but firm mangoes for best texture in salsa.
  • Adjust jalapeño amount based on desired spice level.
  • Chicken can also be cooked in a skillet or baked if grill is unavailable.
