1.5lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1/4cup soy sauce
1/4cup honey
3 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon ground black pepper
1/2 teaspoon salt
Wooden or metal skewers
Instructions
In a bowl, whisk together soy sauce, honey, olive oil, minced garlic, apple cider vinegar, salt, and pepper to create the marinade.
Add chicken pieces to the marinade and refrigerate for at least 1 hour, or overnight for best flavor.
If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Preheat grill or grill pan over medium-high heat.
Thread marinated chicken pieces onto skewers.
Grill the skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
Brush with remaining marinade during the last few minutes of grilling for extra glaze.
Serve hot with your choice of sides.
Notes
Chicken breast can be used, but thighs are juicier and more flavorful.
Serve with rice, grilled veggies, or in wraps.
Double the marinade to use some as a dipping sauce, but boil it first to ensure it’s safe.
