  • 2 tablespoons honey
  • 2 tablespoons chipotle peppers in adobo sauce (minced)
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Other Bowl Ingredients:

  • 2 cups cooked rice (white, brown, or cilantro-lime)
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado (sliced)
  • 1/4 cup red onion (diced)
  • Fresh cilantro for garnish

Optional Toppings:

  • Crumbled queso fresco
  • Sour cream
  • Lime wedges

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, honey, chipotle peppers, lime juice, garlic powder, paprika, salt, and pepper. Add the chicken and toss to coat. Marinate for at least 15 minutes (or up to 4 hours).
  2. Cook the Chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 6–8 minutes, stirring occasionally, until cooked through and slightly caramelized.
  3. Assemble the Bowls: Divide the cooked rice between serving bowls. Top each with chipotle chicken, black beans, corn, avocado slices, red onion, and any desired toppings. Garnish with fresh cilantro and serve with lime wedges.
