Main Marinade:

  • 2 lbs boneless skinless chicken breasts or thighs
  • 3 Tbsp olive oil
  • 3 chipotle peppers in adobo sauce, minced
  • 2 Tbsp adobo sauce
  • 1/4 cup honey
  • 3 Tbsp lime juice
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Garnish:

  • Chopped cilantro

Instructions

  1. Prepare Marinade: In a bowl, whisk together olive oil, chipotle peppers, adobo sauce, honey, lime juice, garlic, smoked paprika, cumin, chili powder, salt, and pepper.
  2. Marinate Chicken: Place chicken in a resealable bag or shallow dish and pour marinade over. Marinate for at least 1 hour or up to overnight.
  3. Cook Chicken: Preheat grill or skillet to medium-high heat. Remove chicken from marinade and cook 6–8 minutes per side (breasts) or 4–5 minutes per side (thighs) until internal temperature reaches 165°F (74°C).
  4. Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with chopped cilantro and serve with lime wedges.

Notes

  • Adjust chipotle quantity for desired spice level.
  • Can also be baked at 400°F for 20–25 minutes if preferred.
