Ingredients

Marinade:

boneless skinless chicken thighs or breasts, chipotle peppers in adobo sauce (mashed or pureed), honey, minced garlic, lime juice or vinegar, ground cumin, smoked paprika (or chipotle chili powder), chili powder or oregano (optional), salt and pepper, olive oil (or avocado oil), butter (optional), cilantro (for garnish)

Instructions

  1. Marinade Preparation: Combine minced garlic, chopped or blended chipotle peppers in adobo, honey, lime juice or red wine vinegar, cumin, smoked paprika, oregano (if using), salt, and pepper in a bowl. Reserve a portion of the marinade.
  2. Marinating the Chicken: Coat the chicken with the remaining marinade and refrigerate for at least one hour, or up to 24 hours.
  3. Cooking: Heat olive oil in a skillet or preheat a grill to about 400°F. Cook the chicken for 5–6 minutes per side on the grill or sear in a skillet for 3–4 minutes. Flip and reduce heat, cooking for approximately 8 minutes until the internal temperature reaches 165°F. Optionally, add butter, lime juice, and drizzle additional honey in the last minutes, spooning pan juices over the chicken.
  4. Resting and Serving: Rest the chicken under foil for 5 minutes. Slice or chop the chicken and toss with the reserved marinade before serving. Garnish with chopped cilantro.

Notes

  • Use chicken thighs for juicier results, but breasts work well too.
  • Adjust chipotle amount based on heat tolerance.
  • Serve in bowls, tacos, or with rice and roasted veggies.
  • Leftovers can be kept in the fridge for up to 4 days or frozen for up to 3 months.
  • Do not reuse the marinade used on raw chicken, only use the reserved portion.
