Honey Chipotle Chicken Bowl

A delicious and flavorful bowl combining tender grilled chicken with a sweet and smoky honey chipotle glaze, served with rice, vegetables, and your favorite toppings.

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 2 tbsp chipotle in adobo sauce (finely chopped)
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked rice
  • 1/2 cup black beans (optional)
  • 1/2 cup corn kernels (optional)
  • 1/4 cup shredded cheese (optional)
  • 1/4 cup sour cream (optional)
  • 1/4 cup fresh cilantro (optional)

Instructions

  1. Preheat the grill or a grill pan to medium-high heat.
  2. In a bowl, mix the honey, chipotle in adobo sauce, lime juice, garlic powder, paprika, cumin, salt, and pepper to create the marinade.
  3. Place the chicken breasts in a shallow dish and pour the marinade over them. Let it sit for at least 15-20 minutes to marinate.
  4. Grill the chicken breasts for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  5. While the chicken cooks, prepare the rice, black beans, corn, and any other toppings you like.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing it thinly.
  7. Assemble the bowls by placing rice at the bottom, followed by the grilled chicken, black beans, corn, and any additional toppings like cheese, sour cream, and cilantro.
  8. Drizzle some extra chipotle honey sauce over the top and serve immediately.

Notes

  • You can substitute the grilled chicken with shrimp or tofu for a different protein.
  • Adjust the amount of chipotle to your preferred spice level.
  • Feel free to add any other vegetables you like to the bowl, such as bell peppers or avocado.
