  • 1 cup all-purpose flour

  • 1 tbsp baking powder
  • 1/2 tsp salt

Wet Ingredients:

  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey

For Coating:

  • 2 tbsp unsalted butter, melted
  • 2 tbsp honey

Instructions

  1. Preheat oven and prepare muffin tin: Preheat oven to 375°F and grease a mini muffin tin.
  2. Mix dry ingredients: In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. Combine wet ingredients: In another bowl, whisk buttermilk, eggs, melted butter, and honey until smooth.
  4. Combine wet and dry ingredients: Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.
  5. Bake: Divide batter into mini muffin cups and bake for 10–12 minutes until golden.
  6. Prepare honey butter coating: Mix melted butter and honey together.
  7. Coat poppers: Brush warm poppers with honey butter mixture before serving.

Notes

  • For a spicy-sweet version, add 1/4 tsp cayenne pepper to the batter.
  • Best served warm; reheat in the oven at 300°F for 5 minutes if needed.
