  • 1 large egg

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup toffee bits (such as Heath)

Optional Topping:

  • Flaky sea salt for topping

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add honey, egg, and vanilla extract and mix until well combined.
  3. Prepare Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the toffee bits.
  4. Bake the Cookies: Scoop dough into tablespoon-sized balls and place on the prepared baking sheet. Bake for 9–11 minutes, or until golden around the edges and just set in the center.
  5. Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Sprinkle with flaky sea salt while warm, if desired.
