Ingredients

Italian Sausage:

1 pound

Olive Oil:

1 tablespoon

Yellow Onion (diced):

1 small

Garlic (minced):

3 cloves

Russet Potatoes (thinly sliced or diced):

4 cups

Chicken Broth:

6 cups

Heavy Cream:

1 cup

Kale (stems removed, chopped):

3 cups

Red Pepper Flakes (optional):

1/2 teaspoon

Salt and Black Pepper:

to taste

Grated Parmesan Cheese (optional):

1/4 cup (for serving)

Instructions

  1. Heat the Pot: Heat a large pot or Dutch oven over medium heat.
  2. Cook Sausage: Add Italian sausage, cook until browned, breaking it up.
  3. Saute Onion: Add olive oil, sauté diced onion until soft.
  4. Add Garlic: Stir in minced garlic and cook briefly.
