  • 1 clove garlic (minced)

Cheese:

  • 2 cups shredded Oaxaca cheese (or Monterey Jack)
  • 1 cup shredded mozzarella cheese

Garnish:

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Cook Chorizo: In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 6–8 minutes. Add the diced onion and cook for another 2–3 minutes, then stir in the garlic and cook for 30 seconds. Remove from heat.
  3. Layer Cheese: In an oven-safe dish or cast-iron skillet, layer the shredded Oaxaca and mozzarella cheeses.
  4. Add Chorizo: Spoon the cooked chorizo mixture evenly over the top.
  5. Bake: Bake for 8–10 minutes, or until the cheese is fully melted and bubbling.
  6. Garnish and Serve: Garnish with chopped cilantro, diced tomatoes, or jalapeños if desired. Serve immediately with tortilla chips or warm tortillas.

Notes

  • For a vegetarian version, substitute sautéed mushrooms or poblano peppers for the chorizo.
  • Queso fundido sets quickly, so serve hot straight from the oven.
