  • 1 large egg

  • 1/2 teaspoon salt
  • 1 1/2 cups finely chopped pecans

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2–3 minutes. Add the egg and vanilla extract, and beat until combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chopped pecans.
  4. Shape and Bake: Scoop the dough into 1½ tablespoon-sized balls and place them 2 inches apart on the prepared baking sheet. Flatten each slightly with your hand or the bottom of a glass. Bake for 12–15 minutes, or until the edges are lightly golden.
  5. Cool and Serve: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
