Ingredients:
1cup unsalted butter, softened
1/2cup granulated sugar
1/2cup powdered sugar
1 large egg
2 teaspoons vanilla extract
2cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2cups finely chopped pecans
Instructions
Preheat the oven: Preheat oven to 350°F and line two baking sheets with parchment paper.
Cream butter and sugars: In a large bowl, cream together softened butter, granulated sugar, and powdered sugar until light and fluffy.
Add egg and vanilla: Beat in the egg and vanilla extract.
Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture and mix until a soft dough forms.
Stir in pecans: Stir in chopped pecans.
Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, place on baking sheets, flatten slightly, and bake for 12–15 minutes until lightly golden.
Cool and enjoy: Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra crunch, toast the pecans before adding to the dough.
These cookies keep well in an airtight container for up to a week and freeze beautifully.
