Dough:

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (optional)

Instructions

  1. Prepare the Dough: On a clean surface or in a large bowl, form the flour into a mound and make a well in the center. Crack the eggs into the well, add the salt, and olive oil if using. Using a fork, gently beat the eggs while gradually incorporating the flour from the sides of the well. Once a dough begins to form, knead it by hand for about 8–10 minutes until smooth and elastic. If the dough is too sticky, add a bit more flour; if too dry, add a few drops of water.
  2. Rest the Dough: Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes. After resting, divide the dough into 2–4 pieces. Roll each piece out using a pasta machine or rolling pin to your desired thickness, then cut into preferred shapes (fettuccine, tagliatelle, or lasagna sheets).
  3. Cook the Pasta: To cook, bring a large pot of salted water to a boil. Add the pasta and cook for 2–4 minutes, depending on the thickness. Drain and serve with your favorite sauce.

Notes

  • You can use semolina flour for a firmer texture or a mix of semolina and all-purpose.
  • Dough can be made ahead and refrigerated up to 2 days, or frozen for up to a month.
