  • 1 egg
  • 3 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract

Additional:

Instructions

  1. Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Wet Ingredients: In another bowl, beat the egg and mix in the milk, melted butter, and vanilla extract.
  3. Combine: Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix (a few lumps are okay).
  4. Cook: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter for each pancake onto the hot surface.
  5. Cook: Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook the other side for 1–2 minutes until golden brown.
  6. Serve: Repeat with remaining batter. Serve warm with maple syrup, fresh fruit, or toppings of choice.

Notes

  • For fluffier pancakes, let the batter rest for 5–10 minutes before cooking.
