For the Chicken Nuggets:

  • 1 1/2 pounds boneless skinless chicken breasts, cut into nugget-size pieces
  • 2 cups crushed BBQ-flavored potato chips
  • 1/2 cup plain breadcrumbs
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Serving:

  • Optional: ranch or BBQ sauce for dipping

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Coating: In a shallow bowl, mix the crushed BBQ chips, breadcrumbs, smoked paprika, and garlic powder.
  3. Prepare the Egg Wash: In another shallow bowl, whisk the eggs.
  4. Prepare the Flour Mixture: In a third shallow bowl, combine the flour, salt, and pepper.
  5. Coat the Chicken: Dredge each chicken piece in the flour, then dip into the egg, and finally coat thoroughly with the BBQ chip mixture.
  6. Bake: Place the nuggets in a single layer on the prepared baking sheet. Bake for 18–20 minutes, flipping halfway, until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  7. Serve: Serve hot with your favorite dipping sauce.

Notes

  • For extra crispiness, spray the nuggets lightly with cooking spray before baking.
  • These can also be cooked in an air fryer at 375°F (190°C) for 12–14 minutes.
