2cups plain Greek yogurt
1/2cup shelled unsalted pistachios
1/2cup vanilla protein powder
1/3cup honey or maple syrup
1 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2cup unsweetened almond milk (or milk of choice)
pinch of salt
1–2 drops natural green food coloring (optional)
Instructions
Prepare the pistachios: Pulse the pistachios in a food processor until finely ground.
Blend the ingredients: In the same processor, add Greek yogurt, protein powder, honey/maple syrup, extracts, almond milk, and salt. Blend until smooth.
Add color: Optionally, mix in green food coloring for a pistachio hue.
Churn the ice cream: Transfer the mixture to an ice cream maker and churn for 20–25 minutes.
Freeze: For a firmer texture, freeze the churned ice cream for 2–3 hours before serving.
Notes
For a no-churn version, freeze the mixture in a loaf pan for 4–6 hours, stirring occasionally.
For added crunch, fold in chopped pistachios before freezing.
