Meatballs:

  • 1/4 cup grated red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Prepare the Meatball Mixture: In a large mixing bowl, combine ground chicken, grated red onion, garlic, parsley, dill, mint, oregano, salt, pepper, red pepper flakes, breadcrumbs, and egg. Mix just until combined—do not overmix.
  2. Form the Meatballs: Roll the mixture into 1 1/2-inch meatballs.
  3. Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Cook the meatballs in batches, turning to brown on all sides, for about 8–10 minutes total, or until fully cooked (internal temp 165°F). Remove and let rest slightly before serving.

  • Serve with tzatziki sauce, over rice, or in pita wraps with tomatoes and cucumber.
  • These meatballs can also be baked at 400°F for 18–20 minutes or air fried at 375°F for 12–14 minutes.
