For the Mashed Potatoes:

  • 2 pounds potatoes (peeled and cut into chunks)
  • 2 tablespoons Greek yogurt
  • 2 tablespoons unsalted butter (or olive oil)
  • 1/4 cup low-fat milk
  • 2 tablespoons fresh parsley (chopped)

Instructions
