1cup natural peanut butter (creamy or crunchy)
1/2cup honey or maple syrup
1/4cup coconut oil
1 teaspoon vanilla extract
2cups crispy rice cereal
1/2cup rolled oats
1/4cup ground flaxseed
pinch of sea salt
For the Topping:
1/2cup dark chocolate chips
Instructions
In a medium saucepan over low heat, combine peanut butter, honey (or maple syrup), and coconut oil. Stir until fully melted and smooth, then remove from heat and mix in the vanilla extract and a pinch of sea salt.
In a large bowl, combine crispy rice cereal, rolled oats, and ground flaxseed. Pour the warm peanut butter mixture over the dry ingredients and stir until evenly coated.
Press the mixture firmly into an 8×8-inch parchment-lined baking pan.
Melt the chocolate chips in the microwave or over a double boiler, then spread evenly over the top.
Refrigerate for at least 1 hour or until firm.
Once set, slice into bars and serve chilled or at room temperature.
