Scale
Main Ingredients
- 1 lb ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
- Roast Sweet Potatoes: Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25–30 minutes, flipping halfway through to ensure even cooking and caramelization.
- Cook Ground Turkey: While the sweet potatoes roast, heat a skillet over medium heat and add a bit of olive oil. Add the ground turkey and cook, stirring occasionally, until browned and fully cooked through.
- Sauté Aromatics: Add the chopped onion and minced garlic to the cooked turkey. Sauté for 2–3 minutes until the onion softens and becomes fragrant.
- Season: Stir in cumin, paprika, salt, and pepper to the turkey and onion mixture, blending well to coat the meat with spices.
- Assemble and Bake: Transfer the roasted sweet potatoes to a baking dish. Layer the seasoned ground turkey mixture on top. Place the dish back into the oven and bake for an additional 10 minutes to meld the flavors together.
- Garnish and Serve: Remove from oven and garnish with freshly chopped cilantro if desired. Serve warm as a satisfying and healthy meal.
