For the cookies:

  • 2 ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/4 cup natural peanut butter or almond butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup dark chocolate chips or raisins (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a medium bowl, mash bananas until smooth. Stir in applesauce, nut butter, and vanilla extract until combined.
  3. Add dry ingredients: Add rolled oats, cinnamon, and a pinch of salt, mixing until a thick dough forms.
  4. Include optional ingredients: Fold in chocolate chips or raisins if using.
  5. Bake: Drop spoonfuls of dough onto the prepared baking sheet and flatten slightly. Bake for 12–15 minutes until edges are set and cookies are lightly golden.
  6. Cool: Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
