  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Wet Ingredients:

  • 1/3 cup coconut oil or unsalted butter (melted)
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract

Additional:

  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix dry ingredients: In a large bowl, mix together the oats, almond flour, baking soda, salt, and cinnamon.
  3. Combine wet ingredients: In a separate bowl, whisk the melted coconut oil, honey, egg, and vanilla until smooth. Pour the wet ingredients into the dry and stir until well combined.
  4. Add chocolate chips: Fold in the chocolate chips.
  5. Bake: Spread the mixture evenly in the prepared pan and press it down firmly. Bake for 20–25 minutes, or until the edges are golden and the center is set.
  6. Cool and slice: Let cool completely in the pan before slicing into bars.

Notes

  • For a vegan version, substitute the egg with a flax egg (1 tablespoon flaxseed meal + 3 tablespoons water).
  • You can also add chopped nuts or dried fruit for variety.
  • Bars can be stored at room temperature or in the fridge.
