For the pancakes:
1 ripe banana, mashed
2 large eggs
1 scoop Arbonne Vanilla Protein Powder
1/4cup rolled oats
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
pinch of salt
coconut oil or nonstick spray for cooking
For serving (optional):
fresh berries
maple syrup
Instructions
Prepare the batter: In a blender or mixing bowl, combine the mashed banana, eggs, Arbonne Vanilla Protein Powder, oats, baking powder, cinnamon, vanilla extract, and salt. Blend or mix until smooth and well combined. Let the batter rest for 5 minutes to thicken slightly.
Cook the pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease with coconut oil or nonstick spray. Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1–2 minutes on the other side until golden and cooked through. Repeat with the remaining batter.
Serve: Serve warm with fresh berries and a drizzle of maple syrup if desired.
Notes
