  • 1 can (14.5 oz) diced tomatoes
  • 6 cups low-sodium vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • 1 tablespoon lemon juice (optional)

Garnish:

  • Chopped fresh parsley

Instructions

  1. Heat the Olive Oil: Heat olive oil in a large pot over medium heat.
  2. Sauté Aromatics: Add chopped onion and cook until translucent. Stir in garlic.
  3. Add Vegetables: Add cabbage, carrots, celery, and zucchini. Cook for 5 minutes.
  4. Simmer: Pour in tomatoes and broth. Season with basil, thyme, pepper, and salt. Simmer for 25–30 minutes.
  5. Finish and Serve: Stir in lemon juice if using. Adjust seasoning. Serve hot, garnished with parsley.
