4cups shredded green cabbage
1cup shredded red cabbage
1cup shredded carrots
1cup pineapple chunks (fresh or canned, drained)
1/4cup chopped green onions

For the dressing:
1/2cup mayonnaise
2 tablespoons pineapple juice
1 tablespoon apple cider vinegar
1 tablespoon honey or maple syrup
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Main Coleslaw Preparation: In a large bowl, combine green cabbage, red cabbage, carrots, pineapple chunks, green onions, and cilantro.
Dressing: In a separate small bowl, whisk together mayonnaise, pineapple juice, apple cider vinegar, honey, salt, and pepper until smooth.
Combine: Pour the dressing over the coleslaw mixture and toss until everything is evenly coated. Refrigerate for at least 30 minutes before serving to allow flavors to blend.
Serve: Stir again before serving and garnish with extra green onions or cilantro if desired.
Notes
For a lighter version, use half Greek yogurt and half mayo.
