1lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1cup carrots, sliced
1cup celery, sliced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
4cups beef broth
1cup elbow macaroni
1 tsp Italian seasoning
Salt and pepper to taste
1 tbsp olive oil
Instructions
Heat olive oil in a large pot over medium heat.
Add ground beef and cook until browned. Drain excess fat if needed.
Add diced onion and garlic, cooking for 2–3 minutes until fragrant.
Stir in carrots and celery, cook for 5 minutes.
Add diced tomatoes, tomato sauce, and beef broth. Stir to combine.
Season with Italian seasoning, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 15 minutes.
Add macaroni and cook until pasta is tender, about 10 minutes.
Adjust seasoning if necessary and serve hot.
Notes
Use ground turkey or chicken as a lighter alternative to beef.
Can be made ahead and stored in the refrigerator for up to 3 days.
For a spicier version, add red pepper flakes or a dash of hot sauce.
