Cookies:

  • 2 cups all-purpose flour

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Filling:

  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups powdered sugar
  • 1 jar (7 oz) marshmallow creme
  • 1 teaspoon vanilla extract
  • orange food coloring (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. Cream butter and sugar: In a separate large bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Add dry ingredients and buttermilk: Add the dry ingredients in thirds, alternating with the buttermilk, beginning and ending with the dry ingredients.
  5. Tint and bake: Divide the batter into two bowls and tint one orange and one black with food coloring. Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes until the tops spring back when touched.
  6. Make filling: Beat butter until smooth, add powdered sugar, marshmallow creme, vanilla extract, and orange food coloring (if using).
  7. Assemble: Spread or pipe the filling onto the flat side of one cookie and sandwich with another. Decorate with sprinkles if desired.
