  • juice of 1/2 lime

Sticky Rice:

  • 1 cup jasmine or glutinous (sticky) rice
  • 1 1/4 cups water
  • 1/4 teaspoon salt

Additional:

  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 2 green onions, thinly sliced
  • toasted sesame seeds for garnish

Instructions

  1. Rinse the rice: Rinse the rice under cold water until the water runs clear.
  2. Cook the Rice: In a medium saucepan, combine rinsed rice, water, and salt. Boil, cover, reduce heat, and simmer for 15 minutes. Let sit covered for 10 more minutes.
  3. Prepare the Sauce: Whisk together soy sauce, sesame oil, honey, ginger, garlic, and lime juice.
  4. Cook the Haddock: Brush the haddock fillets with the sauce. Cook in a non-stick skillet for 3–4 minutes per side until cooked through.
  5. Finish the Rice: Mix rice vinegar and sugar, then fold into cooked rice.
  6. Serve: Place each haddock fillet over sticky rice, top with green onions and sesame seeds.
