Description

Guy Fieri’s Macaroni Salad is a creamy and flavorful twist on the classic comfort food favorite. Featuring perfectly cooked elbow macaroni tossed in a tangy mayonnaise and mustard dressing, this salad is packed with crunchy celery, red onion, shredded carrots, and optional pickles for extra zest. It’s chilled to meld the flavors, making it the perfect side dish for barbecues, picnics, or any casual gathering.

Ingredients

Scale

Pasta

  • 8 oz elbow macaroni (cooked until al dente)

Dressing

  • 1 cup mayonnaise (or Greek yogurt for lighter option)
  • 2 tbsp mustard (Dijon or yellow, or honey mustard for sweeter option)
  • to taste salt
  • to taste pepper

Vegetables

  • 1 cup celery (chopped, can substitute with bell peppers)
  • 1 medium red onion (chopped, can substitute with green onions)
  • 1 cup carrots (shredded, can substitute with radishes)
  • 1 cup pickles or pickle relish (optional)

Instructions

  1. Preparation: Gather and prepare all ingredients. Bring a large pot of salted water to a rolling boil for cooking the macaroni.
  2. Cook Macaroni: Add the elbow macaroni to the boiling water and cook until al dente, approximately 8-10 minutes. Drain the pasta and rinse under cold running water to halt the cooking process and cool it down.
  3. Make Dressing: In a large mixing bowl, combine mayonnaise, mustard, salt, and pepper. Whisk thoroughly until the dressing is smooth and creamy.
  4. Combine Ingredients: Gently fold the cooled macaroni into the dressing along with the chopped celery, red onion, shredded carrots, and optional pickles. Stir carefully until all components are evenly coated with the dressing.
  5. Chill: Cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes to allow the flavors to meld and the salad to chill thoroughly.
  6. Serve: Before serving, stir the salad again and adjust the seasoning as needed by adding more mayonnaise or pickle juice for acidity and creaminess.

Notes

  • For a lighter version, substitute mayonnaise with Greek yogurt.
  • Use honey mustard instead of Dijon or yellow mustard for a sweeter flavor profile.
  • Pickles or pickle relish are optional but add a nice tang and texture.
  • Chilling the salad for at least 30 minutes enhances flavor blend and texture.
  • Substitutions: celery can be replaced with bell peppers, red onion with green onions, carrots with radishes.
  • Adjust seasoning after chilling as flavors may mellow.
