3 medium zucchinis (sliced into half-moons)

1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Casserole Base:
1cup cooked brown rice or quinoa
1/2cup sour cream
1/2cup plain Greek yogurt
1 large egg
1cup shredded mozzarella cheese (divided)
1/4cup grated Parmesan cheese
Instructions
Preheat the oven and prepare the dish: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
Cook the turkey mixture: Brown the ground turkey in olive oil, then add onion, garlic, and zucchini. Season with herbs and spices.
