For the Stir Fry:

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 green onions, chopped

For the Teriyaki Sauce:

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)

For Garnish:

  • 1 tablespoon sesame seeds
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey and cook until browned, about 5–6 minutes.
  2. Add garlic and ginger and cook for 1 minute until fragrant.
  3. Stir in broccoli, bell pepper, and snap peas. Cook for 4–5 minutes until veggies are tender-crisp.
  4. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, red pepper flakes, and cornstarch slurry.
  5. Pour the sauce into the skillet and stir to coat everything evenly. Simmer for 2–3 minutes until the sauce thickens.
  6. Remove from heat and sprinkle with green onions and sesame seeds.
  7. Serve over warm rice.

Notes

  • Feel free to use any stir fry vegetables you have on hand like zucchini, mushrooms, or carrots.
  • Cauliflower rice makes a great low-carb alternative.
