Ingredients

Ground Turkey:

Medium Sweet Potatoes, peeled and diced:

Low-Sodium Chicken Broth or Water:

Shredded Mozzarella or Cheddar Cheese (optional):

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, about 5–6 minutes, breaking it up as it cooks. Season with salt and pepper, then push to one side of the skillet.
  2. Add the diced sweet potatoes to the empty side and cook for 3–4 minutes, stirring occasionally.
  3. Add the onion, bell pepper, garlic, paprika, cumin, and chili powder. Mix everything together in the skillet.
  4. Pour in the chicken broth or water, cover, and let cook for 8–10 minutes, stirring occasionally, until the sweet potatoes are tender.
  5. Remove the lid and let any excess liquid cook off. If using cheese, sprinkle it over the top and let melt for 1–2 minutes.
  6. Garnish with fresh herbs and serve warm.
