- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 head green cabbage, chopped
- 1 medium carrot, shredded
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1/4 cup low-sodium chicken broth
- 1 tbsp soy sauce (or coconut aminos for gluten-free)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened, about 3 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add ground turkey and cook until browned, breaking it apart with a spoon.
- Stir in chopped cabbage and shredded carrot. Cook for 5-7 minutes until vegetables begin to soften.
- Add paprika, oregano, salt, and pepper. Stir to combine.
- Pour in chicken broth and soy sauce. Stir and cover the skillet.
- Simmer for another 5-7 minutes until cabbage is tender.
- Remove lid and cook for an additional 2 minutes to evaporate any excess liquid.
- Serve warm and enjoy!
Notes
- You can use purple cabbage for added color.
- Leftovers keep well for 3-4 days in the fridge.
- For added spice, include a pinch of red pepper flakes.
