1lb ground turkey
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1/2 head green cabbage, chopped
1 medium carrot, shredded
1/2 tsp paprika
1/2 tsp dried oregano
Salt and pepper to taste
1/4cup low-sodium chicken broth
1 tbsp soy sauce (or coconut aminos for gluten-free)
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook until softened, about 3 minutes.
Stir in minced garlic and cook for 1 minute.
Add ground turkey and cook until browned, breaking it apart with a spoon.
Stir in chopped cabbage and shredded carrot. Cook for 5-7 minutes until vegetables begin to soften.
Add paprika, oregano, salt, and pepper. Stir to combine.
Pour in chicken broth and soy sauce. Stir and cover the skillet.
Simmer for another 5-7 minutes until cabbage is tender.
Remove lid and cook for an additional 2 minutes to evaporate any excess liquid.
Serve warm and enjoy!
Notes
You can use purple cabbage for added color.
Leftovers keep well for 3-4 days in the fridge.
For added spice, include a pinch of red pepper flakes.
