  • 1 pound ground beef
  • 1 tablespoon olive oil (if needed)

For the Sauce:

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Serving:

  • 1/2 cup sour cream
  • 8 oz egg noodles, cooked and drained
  • Chopped parsley for garnish (optional)

Instructions

  1. Brown the Ground Beef: In a large skillet over medium heat, brown the ground beef until fully cooked, about 5–7 minutes. Drain excess grease if necessary and set beef aside.
  2. Sauté Onion and Mushrooms: In the same skillet, add olive oil if needed and sauté the onion for 2–3 minutes until soft. Add garlic and mushrooms, and cook for another 5 minutes until mushrooms are browned.
  3. Make the Sauce: Sprinkle flour over the vegetables and stir well. Slowly pour in the beef broth, stirring constantly to avoid lumps. Add Worcestershire sauce, Dijon mustard, salt, and pepper. Bring to a simmer and cook for 3–5 minutes until the sauce thickens slightly.
  4. Finish the Dish: Stir in the sour cream and return the cooked beef to the pan. Simmer gently for another 2–3 minutes until warmed through. Serve over egg noodles and garnish with parsley if desired.

Notes

  • You can substitute Greek yogurt for sour cream for a lighter option.
  • For extra richness, add a splash of heavy cream to the sauce.
