Orzo and Broth:

  • 1 1/2 cups uncooked orzo
  • 3 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup baby spinach

Cheese and Garnish:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
