Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (8 oz) tomato sauce

Additional Ingredients:

  • 2 cups cooked pasta (elbow or rotini)
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F.
  2. Cook Ground Beef: In a large skillet, cook ground beef, onion, and garlic until browned. Drain excess fat. Season with salt, pepper, and Italian seasoning. Stir in diced tomatoes and tomato sauce; simmer for 5 minutes.
  3. Prepare Pasta Mixture: In a bowl, mix sour cream with cooked pasta.
  4. Layer Casserole: In a greased 9×13 baking dish, layer half of the pasta mixture, beef mixture, and cheddar cheese. Repeat layers and top with mozzarella.
  5. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  6. Serve: Garnish with parsley if desired and serve warm.

Notes

  • This casserole can be prepped ahead and refrigerated until ready to bake.
