Ingredients

For the Ground Beef:

1 tablespoon olive oil, 1 pound ground beef

For the Orzo:

1 small onion, diced, 3 cloves garlic, minced, 1 red bell pepper, diced, 1 can (14.5 ounces) diced tomatoes, 2 tablespoons tomato paste, 3 cups beef broth, 1 1/2 cups orzo pasta, 2 teaspoons Italian seasoning, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper

For Garnish:

1/2 cup grated Parmesan cheese, 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Ground Beef: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook until browned.
  2. Cook the Vegetables: Add onion, garlic, and bell pepper, cook until softened.
  3. Add Ingredients: Stir in diced tomatoes, tomato paste, beef broth, orzo, Italian seasoning, smoked paprika, salt, and black pepper.
  4. Simmer: Bring to a boil, then cover and simmer until orzo is tender.
  5. Finish: Remove from heat, stir in Parmesan cheese, and garnish with parsley before serving.

Notes

  • For a creamier version, stir in 1/4 cup heavy cream or cream cheese at the end.
  • Ground turkey or chicken can be used as a substitute for a lighter option.
